Lamb koftas

1kg lamb mince
1 small brown onion, chopped finely
2 garlic cloves, crushed
1/2 teaspoon dried chilli flakes (see note)
1 tablespoon chopped fresh mint leaves
1 tablespoon chopped fresh flat-leaf parsley leaves
2 teaspoons mild paprika
1/2 teaspoon ground ginger
2 teaspoons ground cumin
1 tsp ground turmeric
1 teaspoon ground coriander

What to do;

Mix all ingredients together with your hands making sure the spices are well mixed in

Shape handfuls of the mixture into cylindrical fist shaped little logs – wet hands helps

Pop them in the fridge for at least an hour but you can even do this the day before

Pan fry or BBQ on a med high heat for 10 mins turning as you go – try not to overcook and they will stay moist

Now the fun part – serving & eating. Little lamb koftas are great with flatbread as little wraps – serve with favourite salads and condiments. I’ve used guacamole, a spicy slaw, garlic sauce and chilli sauce here – hot hot hot!
